Sucrose (CAS 57-50-1 ), also known commercially as saccharose, is the refined crystalline sugar sourced from sugarcane and sugar beet that underpins sweetening, preservation, and functional formulation across multiple industries.

Beyond its role as a bulk sweetener, it functions as a humectant, chelating agent, and excipient carrier in both food and pharmaceutical manufacturing. In food production, it controls water activity to extend shelf life.

This versatile ingredient is used in confectionery, baked goods, jams, and beverages while simultaneously delivering sweetness and body. Pharmaceutical manufacturers rely on it as a tablet coating agent and syrup base.
