Hexanal (CAS 66-25-1 ), also known as n-Caproaldehyde and carrying FEMA number 2557 , is a short-chain aliphatic aldehyde used as a flavoring and fragrance ingredient.
It delivers a characteristic fresh, green, grassy note that underpins a broad range of consumer product formulations. In food and beverage flavoring, it contributes to the fresh, cut-grass character of fruit flavors.
