Monocalcium phosphate (CAS 7758-23-8 ), also known as MCP and classified as E341i , is a calcium phosphate salt used primarily as a leavening acid and pH regulator in food manufacturing.

Its fast acid-release profile makes it a preferred choice in baking systems where rapid CO₂ generation is required. In baked goods, it acts as a fast-acting leavening acid, reacting with sodium bicarbonate to produce lift.

This chemical is essential for products such as self-rising flour, baking powder blends, and pancake mixes. Feed manufacturers incorporate it as a bioavailable phosphorus and calcium supplement in poultry and swine diets.

It is also used in aquaculture diets to support bone development and feed conversion. Food processors use it as a buffering and sequestering agent in processed cheeses and canned products to stabilize pH levels.
