Ammonium sulfide ( CAS 12135-76-1 ), also known as diammonium sulfide, is a sulfur-containing ammonium salt used commercially as a flavoring agent and chemical intermediate. It contributes characteristic savory and sulfurous notes that replicate naturally occurring flavor profiles.
In food and flavor manufacturing, it is used as a FEMA 2053 -listed flavoring agent to develop roasted, meaty, or savory taste profiles in processed food products. Flavor houses incorporate it into reaction flavor systems.
During thermal processing, controlled sulfur release generates target aroma compounds essential for authentic food profiles. In agriculture, it functions as a nitrogen and sulfur source in specialty fertilizer formulations targeting sulfur-deficient soils.
