Overview
Vanillin (CAS 121-33-5 ), also sold under the trade name Zimco, is the primary synthetic flavoring compound used to replicate and extend natural vanilla flavor across food, fragrance, and pharmaceutical applications.
Derived from guaiacol or lignin, it delivers a consistent, cost-effective alternative to vanilla bean extract at commercial scale. In food and beverage manufacturing, it is used to flavor chocolate and baked goods.
